Migrate website from Zen Cary to Open Cart and install new theme / template

I have a zen cart website. I want to migrate over to opencart however I do not want to lose details of my products or customers so I want these imported to the new website.
Then I want you to install a new theme for my new open cart website. I actually need some advice as well at this point and assist me in selecting a theme/template
My most important criterion is...
- Fast checkout and great at converting visitors.. Even a one page checkout and option for really quick checkout with PayPal.
Other important criteria...
- Professional, slick and up to date in terms of style
- Responsive - shows very clearly on tablets and mobiles
- Different languages. I want to have foreign versions of the website so this will need to possible with the template or easily added onto the site
- Google Merchant Shopping centre - Again I want to generate a shopping feeds for all the different languages so will need to be able to do this or again install an add on without much difficultly
I will also need your assistance to ensure the google shopping feed is generating.
I do not want to delete my original website until I have tested the new website to ensure it is converting well so we will build it in a different place on my hosting and just update the nameservers initially. This will give me an option to switch back if I notice sales plummeting.
