Reverse engineer MTK6261 smartwatch communication protocol

I am trying to build my own web platform for a Chinese smartwatch based on the MTK6261 chipset (similar to [login to view URL]). I am able to SETIP to point the watch to my server. However, I cannot communicate with it. The job is to have a Skype conversation (in English) where we go through the steps to reverse engineer the protocol, security and API that the watch is using so I can open a socket to the watch and start to build my own API that allows me to control the watch and receive data from it. I have discovered the watch works via sockets not POST and GET requests so this is more complex than simply creating a web server. I have no documentation at all for the watch so all of this will be through reverse engineering the protocol and the handshake. This will be a success when we have created a socket for the watch that persists and sent successful commands both to and from the watch.
