Debug Magento 2 Missing Order Information on Random Orders

Hello, We require a Magento 2 expert to debug an issue we're having with the clients Magento 2 website. We hired some Freelancers from here to build the website, however it seems it has been left with some strange bugs which they cannot fix. The issue is randomly an order will come through which will have missing order information. This missing order information can include the following: - Missing billing address - Missing Shipping address - No carriage (shipping) paid - Order comes through with code within order confirmation - The website Is able to switch to Euros currency and also different countries (French / Italian / German) for some reason we have UK customers who say it automatically switches to ‘French’ and the order is processed in Euros and in French?! We have tested this a few times with no issues, our tests go through perfectly fine. It seems to be every order one in every 100 orders which have this issue. It could possibly be due to the device the user is visiting the website with, we do not know. We need someone to figure out why this is happening and to put a stop to this once and for all. We have a document with as many notes and orders with the issue on, including what users who experience the issue have noted. We also have a Staging website set up for testing. I have attached a screenshot of the order confirmation with the users details blanked out for privacy purposes.
